Just a second after we got out of the car that had brought us to Bisbee, a grey haired mustached hippie with a knitted beanie immediately started helping us out. Little did we know that we had just met the most amazing person you can wish to meet and that we'll spend an amazing four days with him and his wife Reva. Although Rafiki likes to tell he came up with the idea of the Kalesadilla, it was actually one his good friends' recipe. It all goes back to the times when he was building a big f-ing wall with his friend Donald. When Rafiki would get tired, Donald would give him a piece of Kalesadilla saying ''Eat that and together we'll make an even bigger wall. BIGGER. BIGGER! And make America great again." Rafiki really loved his friend Donald. Just like everyone else. We hope you'll love the Kalesadilla as much as we all love Donald.

Ingredients

Instructions
  1. Cut the peppers and onions in slices and grill them in the oven until they're nicely colored and cooked.
  2. While your veggies are taking a lil' tan in the oven, you can start to sauté your kale in a pan with some olive oil. As kale can taste bitter for some people, make sure you cook it well until it is nice and soft.
  3. Good! The first part of the recipe is done. You can add any vegetable you want (like mushrooms, tomatoes, corn, artichokes, ..) and prepare this first step up to a couple of days ahead if you want.
  4. Time to make the Kalesadillas!
  5. Fill half your tortilla with as much cheese as you like and add the vegetables on top of it
  6. Close the tortilla in half. Put it in a hot pan with olive oil Cook both sides for 3 to 5 minutes on medium heat, don't let the tortilla burn
  7. Serve with sour cream and hot sauce of your choice. Add rice and salad on the side and enjoy!
Recipe Notes

It takes about 40 minutes to cut and fry every vegetable you plan to use and approximately 10 minutes per kalesadilla. You could cook 2 at once in one pan.

Keep in mind you can store your kale and other vegetables in the fridge to use them at a later time.
